We are in an education environment as well but do not use Guided Access as the passcode requirement creates issues when students move between rooms. Are you using the guided access as a way to keep a student locked into that app? If so, would using Apple Classroom be a functional alternative? Classroom allows the "teacher" to launch an app, and lock into it, on a student device. They can lift that lock as well for when the student needs out of the app.
